Banana Snack Cake
A wonderful banana bread, especially with chocolate chips!
Ingredients:
1 2/3 C all-purpose flour
1 tsp baking soda
1 C packed brown sugar
1/2 C water
1/3 C mashed ripe banana (about 1 small)
1/3 C vegetable oil (NOT APPLESAUCE)
1/2 tsp vanilla extract
6 oz chocolate chips (optional)
Confectioners' sugar
Instructions:
In a large bowl, combine flour and baking soda. In another bowl, whisk the brown sugar, water, banana, oil and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips at this time, if using. Transfer to a greased 8-inch square baking dish, or a 9x13 if doubling the recipe. Bake at 350°F for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Dust with confectioners' sugar. Cut into squares. Yield: 9 servings.
